- Fry onions in oil until fairly dark
- Add spices (salt, pepper, cumin) (Need to double check the spices)
- Drain out onions
- Add beef broth to add more flavor
- Add mung beans to onion broth
- Add long grain rice
- Let it cook until water is gone and voila

- Boil pasta in salty water
- Once boiled, leave water in pasta (but if there's too much water, drain it out so that there's enough to cover most of the pasta)
- Add chickpeas and kidney beans
- Add quroot and keep stirring until the sauce sticks to the noodles
- Add more water or quroot based on sauce consistency (it should be like a white pasta sauce that sticks to the noodles)

15 day Afghan food challenge: Daal
- Chop 1/2 to 1 full onion (depending on dish portion)
- Chop garlic
- Put oil in pan and fry onions, then add garlic once onions start to brown
- Add spices and mix
- Tumeric
- Cumin
- Dill
- Salt
- Pepper
- Red pepper
- Tomato paste
- Once a "sofrito" has been made, put it in the daal and mix it well
- Let the rest of the lentils cook through, being careful to not let the bottoms burn
- Once it's ready, fry oil, chopped garlic, and dried red chili pepper until it is aromatic and pour over daal dish

Paella
Absolutely obsessed with making paella these days. We did a camping version of it about a year ago. It turned out OK. But then I took a Sur La Table course and it really upped my technique game. Now we make it great 80% of the time.

Potatoes
I was at my grandparents house and my grandpa asked us to make a really simple dish: potatoes. My sister and I looked at each other - we don't know!
After my grandma relaying the recipe from upstairs while taking care of my grandpa, we realize how simple it truly is. For next time, to try without the added pressure of grandparents judgement.
Cut the potato in cubes
Add oil
Salt, Pepper, Coriander
Cook for few minutes on med-low.

Chicken Korma
1/2 chopped onion
1 chopped tomato
2 chopped garlics
1/2 tomato paste
1/2 cup of water
1 tsp of salt and pepper
Brown the onions, then the garlic. Add tomatoes and paste and stir well. After a few stirs, add chicken with salt and pepper. Stir well. Add water and put it on low for 20 minutes.
